Chet Sharma returns to Gymkhana as global culinary director

The chef behind London’s BiBi has taken on an additional role at Gymkhana, where he will oversee the Michelin-starred restaurant’s international expansion while continuing to lead his own Mayfair venue.

Chef Chet Sharma has been appointed global culinary director at Gymkhana, the two-Michelin-starred Indian restaurant in London’s Mayfair, while retaining his position as founder and chef patron of BiBi.

The appointment marks a return to the restaurant where Sharma previously helped shape the culinary direction of several of JKS Restaurants’ Indian concepts during his tenure as group development chef.

Sharma has worked with JKS Restaurants for the past decade, before opening BiBi with the group in 2021. His new role will see him oversee Gymkhana London and support the brand’s expansion across identified regions in North America and the Middle East, while also working alongside its executive and head chef teams.

Continuing at BiBi

Sharma will continue to lead BiBi, which is now in its fifth year. The restaurant serves dishes inspired by ingredients and memories from the Indian subcontinent.

He will remain actively involved in the day-to-day running of the restaurant alongside head chef Erin Jackson Yates and restaurant director Millie Povey.

Commenting on the dual role, Sharma said: “BiBi is and always will remain a very personal project for me. I look forward to nurturing and overseeing the growth of my amazing team at BiBi who really deserve all the credit for the restaurant’s success.”

He added: “Returning to Gymkhana now feels like a homecoming of sorts. It’s a return to the place that – especially in the early days – educated my Indian palate more than anywhere else. As we step into this new chapter, I’m proud to be working alongside the talented and established teams across Gymkhana. I’m grateful for the support and trust placed in me by Jyotin, Karam and Sunaina Sethi to lead two such incredible restaurants.”

Global growth plans

Gymkhana opened in 2013 and earned its first Michelin star a year later, followed by a second in 2024. The restaurant has since expanded beyond London with three international locations, including an opening in Las Vegas in December 2025, and has also launched its retail arm, Gymkhana Fine Foods.

Karam Sethi, co-founder of JKS Restaurants, said: “Chet has been an integral part of JKS for many years. He has an innate understanding of Gymkhana, alongside the leadership and vision to lead the brand on a global stage.”

Sharma opened BiBi in September 2021. The restaurant entered the World’s 50 Best Discovery list in 2024, was named Best Restaurant at the GQ Awards in 2022 and won Best Cocktail List of the Year at the National Restaurant Awards in 2025.
