Leading European bartender joins Advocatuur

Advocatuur, the signature bar at The Rosewood Amsterdam, has appointed Maroš Dzurus as director of bars and beverage ahead of its anniversary.

Advocatuur at Rosewood Amsterdam has appointed Maroš Dzurus as its new director of bars and beverage, effective this month (April) 2026.

Dzurus succeeds Yann Bouvignies, who is moving into a new role within Rosewood, as the bar prepares to mark its first anniversary in the former Palace of Justice. The appointment signals what the venue describes as its “next chapter” as it looks to further develop its position in the luxury bar sector.

Experienced hire from Himkok

Dzurus brings nearly 20 years of experience in the drinks and hospitality industry. He joins from Himkok in Oslo, where he progressed from head bartender to bar manager. During his time there, the venue strengthened its reputation as one of Scandinavia’s leading cocktail destinations and became a regular fixture on The World’s 50 Best Bars list.

He also previously collaborated with Advocatuur during its first guest shift. The bar noted that this early partnership, alongside a shared focus on guest experience and design, made his appointment a “natural and well-aligned next step”.

Focus on creativity and local identity

In his new role, Dzurus will lead the team in shaping the bar’s creative direction and future mixology programmes. His remit includes developing a drinks offering that reflects Amsterdam’s cultural identity alongside Rosewood’s A Sense of Place philosophy.

His approach will focus on the use of local and seasonal ingredients, team development, and enhancing the guest experience through service, storytelling and technique.

Dzurus said: “I am very much looking forward to making the move to Amsterdam to lead the team at Advocatuur. Over the past year the team has cultivated a bespoke and inspiring drinks experience committed to heritage, culture and outstanding hospitality. I hope to build on this foundation by working closely with the team, building relationships within the local community, and supporting the continued development of the bar experience. I am excited to help define the next chapter of Advocatuur’s presence within the global bar scene.”

Advocatuur, the signature bar at Rosewood Amsterdam, combines the building’s heritage with a contemporary cocktail programme. It features an in-house distillery producing Prøvo jenever, alongside multiple bar spaces, live music and an Indian-influenced food offering.
