Evolv Collection acquires Vinoteca with plans to expand Sartoria brand

The Evolv Collection has acquired wine bar group Vinoteca and plans to rebrand its two London venues under its Sartoria restaurant arm.

Vinoteca Farringdon will be transformed into Vinoteca di Sartoria, serving small plates alongside an extensive wine list, while Vinoteca City at Bloomberg Arcade will offer Mediterranean dishes.

Originally founded by Sir Terence Conran, the Sartoria brand already includes its Savile Row flagship and the former Fiume restaurant in Battersea – soon to reopen as Sartoria Battersea. A new Sartoria will also launch in the former Launceston Place site this November.

Further expansion is planned for early 2026, when another Sartoria venue will open on Liverpool Street. The addition of Vinoteca di Sartoria will bring the portfolio to five sites, featuring a small plates menu inspired by Sartoria Launceston Place’s lunch offering, complemented by Vinoteca’s wine programme.

Vinoteca was rescued from administration in 2023 by private equity firm Breal Capital, safeguarding 150 jobs after the business struggled with inflation, rising energy costs and train strikes. Since then, its King’s Cross venue has been converted into a Harry’s restaurant, while its Borough Yards location is set to become home to Thai restaurant Plaza Khao Gaeng.

Williams, the former Rare Restaurants CEO who joined The Evolv Collection earlier this year, has been focused on developing core brands including Bluebird, Stories, Sartoria, Chophouse and Tavern.

Speaking about the deal, he added: “This is about creating something special – honouring Vinoteca’s legacy whilst writing an exciting new chapter for the Sartoria brand.

“From intimate wine bars to our flagship restaurant, the Sartoria collection will offer Londoners multiple ways to experience the elegance of Milan.”
