Theatrical Swiss-inspired fondue concept to launch in London

Heritage will open in Soho this July proffering fondue dips, raclette dishes and an extensive list of Swiss wines.

The kitchen will be led by head chef Aarik Persaud, whose culinary history includes Chewton Glen in the UK and The Butchers Club in Hong Kong.

Prepared in an open, theatre-style kitchen and designed for sharing, the menu is set to feature vegetable, meat or seafood fondue; rösti with maple-glazed Dingley Dell lardons, Tomette de Brebis and shaved truffles; raclette with Cobble Lane charcuterie including 24-month ham, wagyu bresaola and saucisson; and a chateaubriand of Dedham Vale beef, with guests offered the opportunity to barbecue prime meat cuts, fresh seafood and seasonal vegetables on individual table-top charcoal grills.

A selection of small plates will also be available such as a dry-aged steak tartare and a lobster tart with roasted fennel.

The drinks list will offer a selection of cocktails by drinks expert and mixologist, Zoran Peric, while an 200-strong wine list curated by head sommelier Elena Serban will “take you on a journey across the Alps”.

Head chef, Aarik Persaud, said: “We’re delighted to be opening in the heart of the West End and introducing our unique concept to the capital. London offers myriad cuisines, but upscale Swiss food is totally underrepresented. 

“We are looking forward to bringing an interactive element to dining through tableside grilling and fondue, but without comprising on quality. I am confident it will be well received by Londoners and visitors to the capital alike.”

Designed by Kanvass, the 80-cover venue will combine industrial features with soft furnishings featuring copper-coloured leather banquettes, charcoal grey club chairs and high-level bar stools paired with walnut panelling and exposed brickwork.

A bar at the heart of the restaurant will accommodate 10 guests while a semi-private dining area will seat up to 14.

Heritage will open on 28 June, operating a soft launch until 30 June with 50% off food.
