Peru: the next big cuisine?
Ceviche will bring a flavour of Peru to London next year when it opens in Soho in March.
With Peru tipped by the likes of Ferran Adrià and René Redzepi as the next major cuisine trend, head chef Alejandro Bello will be looking to win over fans with his ceviche selection, as well as his marinated beef heart anticuchos and seafood-stuffed potato cake causas.
The project represents the culmination of two years planning by former Apple executive and DJ Martin Morales (pictured), who tested the London market in June by setting up a pop-up version of the restaurant, which sold out in a day.
Ceviche will also do its bit to boost Pisco appreciation in the UK, with a dedicated Pisco bar serving up a selection of inventive cocktails, headed up by its most famous incarnation, the Pisco Sour.
Last week the drinks business reported that Capel, the world’s largest Pisco producer, is achieving significant growth outside its traditional Peruvian and Chilean markets, doubling international sales in 2010.
