Le Comptoir group somm to join Park Lane Pullman Hotel

Wallace Lo, the group sommelier for Hong Kong’s upscale restaurant group, Le Comptoir, is to join the Park Lane Pullman Hotel as its hotel sommelier.

Wallace Lo has been with Le Comptoir for three years since its foundation. He studied Hotel Management at Hong Kong’s Institute for Vocational Education (IVE) for three years and afterwards, cut his teeth at upscale French restaurant, The French Window under the mentorship of Alan Liu where he also studied for his WSET Level 3.  Lo was also named as one of dbHK’s top sommeliers in 2016.

Le Comptoir is one of Hong Kong’s main F&B groups, with seven restaurants including Brazilian/Japanese hybrid Djapa, Balinese Tri, artsy Bibo and high-end seafood restaurant, Ocean.

Cedric Jacob and Sebastien Chevalier remain as sommeliers for Le Comptoir.

In a personal letter to the trade, Lo said: “It has been an amazing experience to work with you all in the past three years. Without all of your support, it would have been impossible for me to start up so many restaurant projects within the group. We started with only one little restaurant called Bibo, and now we are a group of seven outlets.

“This is a really big decision for me to move on to another step in my career. And I am 100% sure that I will need even greater support from you in the up and coming future.

“I really can’t wait to see you all in my new position, let’s keep on discovering all those unknown and hidden gems in the wine world. With your support I am very confident that I will be able to create another amazing wine list and wine program for my new project and bring fun, interesting and delicious wines to more and more diners.”
