Man Wah chef joins Maximal Concepts

Lee Man Sing of the Mandarin Oriental’s Michelin-starred restaurant, Man Wah has moved to Mott 32 as its executive chef.

Working with Mott 32’s culinary director, Malcolm Wood, Lee has created a new a la carte menu focusing on traditional Chinese cuisine with Western influences such as wok-fried Australian Lobster with egg white and Yunnan ham, and garoupa with sea salt and ginger.

Lee is the former head chef at the Mandarin Oriental’s classic Cantonese restaurant, Man Wah and earned his first Michelin star while working there as well as scooping the Hong Kong Tourism Board’s Culinary Award in 2006 and 2009.

He was also appointed as a member of the Hong Kong Chinese Chefs Association and as one of the judging panels for HOFEX. Prior to his position at the Mandarin Oriental, he worked at the Fortune Room at The Hong Kong Jockey Club and Hoi Yat Heen at the Harbour Grand Kowloon.

Mott 32 is part of the Maximal Concepts restaurant group with a focus on modern Cantonese cuisine and is named after 32 Mott Street in New York – the site of the city’s first Chinese convenience store, which opened in 1851.
