db‘s Hong Kong publisher, Ivy Ng, was lucky enough to visit the Salt Grill in Singapore last week for a masterclass on Austrian wines.

White wines from Weingut Fred Loimer and reds from Weingut Gernot and Heinke Heinrich were the order of the day, with the masterclass hosted by Ying Hsien Tan.

The masterclass was followed by lunch including sashimi of kingfish, ginger, shallot and goat’s feta, which Ivy reported paired extremely well with the Loimer Gruner Veltliner, and the Salt Grill’s signature pudding; chocolate delice, salted caramel, honeycomb, praline ice cream.

db‘s Rupert Millar, meanwhile, was off exploring the New Territories and the famous fish restaurants of Sai Kung with their tanks of fresh seafood – some of which are big enough to hold five or six of these giant grouper.

Robert Sleigh, head of Sotheby’s wine Hong Kong, at the house’s recent auction which saw a “superlot” of 114 bottles of Domaine de la Romanee-Conti break all previous auction records when it sold for HK$12 million.
