Roux at the Pembury opens

Roux at the Pembury, a new bar addition to the Roux fine dining portfolio, has opened as part of Roux at Parliament Square in London.

Named after Pembury in Kent, where Michel Roux Junior was born, Roux at the Pembury offers a lighter menu and less formal setting than the main restaurant downstairs, which opened last year.

Dishes include house-cured gravadlax and crème fraiche served on toasted multi-seed bread; a British and French cheeseboard and pork scratchings rolled in smoked paprika.

Roux has also developed a three course cocktail menu: the Ketel One, fino Sherry and Dalwhinnie-based “Three Citrus Ricky”, the Pimms-inspired “Pembury Cup” and the indulgent “Colonial Flip”, a creamy mix of white rum and Guinness.

The concise wine list features a selection from Champagne Gosset alongside Michel Roux’s father’s own label Albert Roux from Lenoble. The rest is largely French focused, accompanied by a range of English beers and an extensive list of whiskies and other spirits.

Explaining this latest addition, Roux said: “With the launch of the bar we were keen to introduce a new drinks menu concept that reflects the influences of the main restaurant menu. Hence the three-course cocktail menu and use of seasonal ingredients which we look forward to introducing to our guests, whether they are visiting for dinner, drinks, or both.”
