Unfiltered: Jan Konetzki, Le Dame de Pic London

German-born Jan Konetzki was plucked from the Gordon Ramsay Royal Hospital Road for to take up the position of director of wine at Le Dame de Pic London at the Four Seasons, chef Anne-Sophie Pic’s debut London venture, and also of Ten Trinity Square Private Club – the hotel’s private members’ club launching soon at in partnership with Château Latour.

What’s your vintage?

1980. Horrid in Bordeaux, Burgundy and the Rhone but if you look hard you find some fully mature Napa Cab, Barolo, Champagne and of cause Port.

What’s your go-to drink at the end of a long day?

In my role, I don’t work at dinner service all the time so I actually enjoy a glass of Riesling after work, or a stop over at the bar for a Negroni.

What’s your most embarrassing front-of-house moment?

I have literally no shame.

If you could give your younger self advice when starting out as a somm, what would it be?

To consider if your first thought really is the best reply, to understand that staff are the most valuable asset you will ever manage and to always back up your mobile phone!

Has a wine every given you an epiphany? Which one?

After googling epiphany… I can tell you, yes. 1959 Grand Vin Chateau Latour.

Which customer habit annoys you the most?

I really don’t get annoyed by customer habits. I think compassion is very important in this job.

Who is your inspiration in the gastronomic world?

My mum. She is a great host.

What’s your ultimate food and wine pairing?

Chateau Grillet and crayfish gratin from Maison Pic in Valence.

Where would your fantasy vineyard be?

Maybe a small plot in Pomerol on the plateau.

If you weren’t a sommelier, what would you be doing?

Most likely a tailor, or a chef.

Which wine (grape/style) do you find it impossible to get along with?

Thompson seedless.

Who is the most memorable customer you’ve ever served?

It has to be either Jeff Bezos or the Rolling Stones.
