Sayburn to leave Hotel du Vin
Ronan Sayburn MS is to leave his position as director of wine and spirits at the Hotel du Vin group to join the Dorchester Collection.
Sayburn will join the group on 3 September as director of wines and will set to work building the wine lists at the Dorchester’s three properties in and around London.
As well as working on the wine offer he will be in charge of a training scheme for the staff.
Sayburn said that the offer was “too good to pass on” and in no way connected to the appointment of Gary Davis as chief executive six months ago.
As well as welcoming Sayburn this autumn, the Dorchester Collection has poached his new superior, Stephane Lafon, from the Hilton to be director of food and beverage.
