Tasting notes:
This wine, a collaboration between the Delevingne sisters, who actively participate in its production and the Foss Marai company, managed by the third generation, Andrea, Christiana and Umberto. A vegan wine, from the complex soils of Valdobbiadene caldera, it has a pale lime-green hue with small bubbles and a mid-width cordon with white peach, lemon zest and acacia honey notes. Extra-dry in style (14.5g/l r.s.), the light-bodied palate flavours are supported by lively acidity and velvet mousse texture. Nicely integrated and with good concentration and length, the wine will pair local rustic ravioli with Cansiglio ricotta and steamed beet tops with sage and nutmeg. [Patricia Stefanowicz MW]
