An evolved aromatic profile with hints of sour apple and woody, mature notes reminiscent of old furniture. The palate is complex and layered, with notable depth and persistence. Ripe fruit and toffee apple sweetness form the core, complemented by caramelised nuances and subtle oxidative development. The finish is very dry, with lingering savoury and slightly sour-edged notes. A structured, characterful Champagne that would benefit from pairing with food to fully harmonise its elements.
