With five centuries of history and 21 generations, Bisol is a name to conjure with for the Valdobbiadene Prosecco Superiore wines. With a wide variety of plots, the family live by their motto, \'Variation without compromise\'. This wine, from the 8 ha vineyard of mainly limestone soil in Rive di Campea, is very pale lemon-yellow in colour with a mid-width and persistent perlage and shows peach, apple, and melon fruit with a gentle toasty-buttery accent. Extra Brut (5g/l r.s.), the palate has lively acidity and a mouth-filling mousse and a broad mid-palate. Clay-like minerality comes through on the savoury finish. An intriguing wine that would make a good partner for butternut squash gnocchi with grated hard cheese and just a hint of cinnamon. [Patricia Stefanowicz MW]
