Founded in 1760 and based at the heart of the Côte des Blancs in Le Mesnil-sur-Oger, Champagne Delamotte produces this lovely wine which delivers the purity and chalky minerality of this village in Champagne. Other villages add different components: Avize for balance and structure, Oger for generosity, Chouilly for smoky autolysis and Oiry for acidity. This example is a pale lemon-yellow colour with persistent bubbles. The aromatics show golden and green apples and yellow peach with buttery croissant autolysis. Elegant, the Extra Brut-style (7g/l r.s.) palate has brisk acidity and light body supported with crackling mousse texture. Well-defined and with good length, this savoury wine would suit prawn ravioli in a lemony cream sauce. [Patricia Stefanowicz MW]
