The wines of Champagne Delamotte, based in the Côte des Blancs in Le Mesnil-sur-Oger, are inevitably based on Chardonnay. This Brut is no exception with 60% Chardonnay setting the tone. Pale gold-hued with persistent streams of tiny bubbles, the wine exudes apple, pear and a hint of barberries with buttery croissant autolysis. Brut style (8g/l r.s.), the mid-weight, beautifully integrated, palate has racy acidity and creamy mousse texture. The wine is quite dense and has a long finish. Perfect pairing for ripe William pear and creamy goats cheese on soft lettuce with a walnut oil-Champagne vinegar sauce salade. [Patricia Stefanowicz MW]
