The Thiénot motto, \'A single passion: wine; a single obsession: quality\', certainly fits this exquisite example of Rosé Champagne. Pale peach-pink in colour, the wine shows crunchy red berries and a delicate fresh yeast undertone. Very dry (4g/l r.s.), the palate is concentrated yet lightly-styled with wild cherry flavour bracketed by racy acidity and creamy-textured mousse. Crushed red roses and camellia blossom accents add interest. A very, very good food wine for Beijing-style Chinese dim-sum. [Patricia Stefanowicz MW]
