Since 1921, Maison Collet, based in Aÿ, has embodied the \'soul\' of Champagne: passion, rigour and authenticity. The grapes for this wine are largely sourced from the Côte des Blancs Grand Cru villages of Chouilly, Cramant, Avize and Oger and the Montagne de Reims Premier Cru village of Villers-Marmery. Very pale lemon-green in hue with tiny bubbl es, the wine exhibits purity of green apple and pear fruit with accents of flowers and fresh white bread autolysis. Brut style (7g/l r.s.), the light-bodied palate is restrained, but intense with lovely fruit and creaminess and a lemon-lime nuance framed by lively acidity and brittle mousse. Great concentration and length, the wine will be an excellent pairing for lemon sole meunière. [Patricia Stefanowicz MW]
