Champagne Deutz was established in 1833 in Aÿ. The House has 350 ha of vineyards and chalk caves 65m below ground, perfect for ageing the wines. This wine is gorgeous: pale white-gold in hue with tiny, persistent bubbles and a narrow cordon with yellow pear, green apple, cranberry and fresh white bread overtones. Brut style (6.5g/l r.s.), the palate is mid-weight with the flavours supported by very fresh acidity and silky mousse. Beautifully integrated, the wine has good persistence across the palate and a long finish. A good pairing for prawn and smoked salmon crêpes with a Champagne cream sauce. [Patricia Stefanowicz MW]
