A fairly recent Prosecco producer, established when Ermenegildo Giusti planted his first vineyards in 2002, Giusti nonetheless embodies everything we love about Asolo, the place and the wines. Asolare, disporting in the refreshing air, enjoying oneself at random, is an ethereal concept and this wine delivers just that. Very pale lemon-hued with small bubbles and a mid-width cordon, the wine exudes green apple, white peach and white pear fruit with gentle yeast and white flower overlay. Very light bodied and Brut in style (6g/l r.s.), the palate is elegant with lively acidity and velvet mousse filling the mouth. Good concentration of flavour, well-balanced and lengthy, the wine is perfect with mid-afternoon biscotti, but would equally work well with an Asolano squash soup and toasted bread.
