Established and directed by native Champenoise, Mathilde Boulachin, Chavin aims to produce wines that satisfy consumers today. This one is exceptional and great value. Based on Sauvignon Blanc combined with local varieties, the wine has a pale lemon-green colour and plenty of greenfruit, nettles and kiwi with a hint of pink grapefruit from Gros Manseng. Dry, the light-bodied palate has good flavour definition balanced by very crisp acidity. Bright on the finish, so a delicious wine with delicate sushi and sashimi. [Patricia Stefanowicz MW]
