Founded in 1551, Cordoníu is the oldest producer of Cava, the traditional method sparkling wine of Spain. They are noted for including Chardonnay in their wines, giving elegance and freshness. This example, a Blanc de Blancs, is dominated by Chardonnay, blended with the indigenous Xarel-lo and Parellada. Medium yellow-gold in hue with tiny bubbles and a persistent cordon, the wine shows ripe pear and ultra-ripe golden apple fruit with toasty autolysis and a hint of lemon zest. Extra-Brut style (7.35g/l r.s.), the mid-weight palate is framed by racy acidity and brittle mousse texture. Nicely integrated and lengthy, this is a wine to pair with Jarlsberg cheese soufflé and tarragon-cream sauce. [Patricia Stefanowicz MW]
