This rare Cuvée is dedicated to the founder of Champagne Deutz and is only produced in exceptional vintages. The Pinot Noir vineyard, Côte Glacière, is a 1.92 ha plot adjacent to the winery in Aÿ. Pale white-gold in colour with continuous streams of tiny bubbles, this example has a precise bouquet of juicy yellow plums, strawberries and nectarines with  vanilla-pod and cinnamon undertones. Mid-weight, Brut style (7g/l r.s.), the palate is dense and complex with very fresh acidity and creamy mousse supporting the flavours. With its Pinot Noir character to the forefront, this wine will go really well with classic Veal Saltimbocca. [Patricia Stefanowicz MW]
