Under the direction of Chef des Caves, Carine Bailleul, the wines of Castelnau are elegant with lightness and brightness. In this example, from the very good 2010 vintage, the purity of Chardonnay shines. Aged for at least ten years on the lees, the wine now shows a medium yellow-gold colour with tiny persistent bubbles, ripe stone fruits and intense brioche. Brut style (6g/l r.s.), the palate has brisk acidity enlivening the round, rich flavours with spice notes. Nicely integrated, beautifully textured and layered, the wine seems mature and will be an excellent match for seared turbot with a butter-cream sauce and steamed asparagus. [Patricia Stefanowicz MW]
