The Penfolds collaboration with family-owned Thiénot was launched in 2019 to celebrate Penfolds\' 175 years of winemaking and as recognition of Max Schubert\'s early vision for Grange, which he began in Bordeaux. This wine, pale lemon-hued, shows red berry fruits and toasted bread yeastiness. Extra-Brut in style (4.8g/l r.s.), the palate is quite light-bodied with great freshness and velvet-textured mousse accenting the elegant flavours. Intense, yet delicate and pristine in keeping with the Thiénot house style, the wine will make a lovely partner for a light chicken terrine with a tomato vinaigrette sauce. [Patricia Stefanowicz MW]
