Founded in 1947, Champagne Palmer has long been known for quiet elegance, precise and pure. This Blanc de Blancs comes mainly from the Premier Cru vineyards in Trépail and Villers-Mamery in the Montagne de Reins with a little delicately fruity Chardonnay from the Côte de Sézanne. Medium yellow-hued with small, persistent bubbles, the wine has ripe green apple, citrus fruit and flowers with intense butter and brioche autolysis and an almond nuance. Brut-style (6g/l r.s.) the wine is mid-weight and the flavours are supported with racy acidity and silky-textured mousse. A hint of grass on the lengthy finish adds lift and compliments roses and rhododendrons that flow onwards. Layered and textured, the wine will be an exceptional match for trout tartare with citrus fruits, as recommended by their in-house chefs. [Patricia Stefanowicz MW]
