The first organic Champagne from Champagne Nicolas Feuillatte, the wine is made from grapes sourced mainly in the Côte des Bar and Les Riceys, where the slightly less cold-and-damp climate makes organic viticulture a little easier. Mid-lemon in colour with tiny bubbles, the wine exhibits white peach, quince, pomegranate and mirabelle plum with a grilled toast overlay. Extra-Brut style (6.1g/l r.s.), the palate is light-bodied and framed by bracing lemony acidity and quite assertive mousse texture. Good length and nicely balanced, the wine will match a starter of oysters gratined with parmigiano cheese. [Patricia Stefanowicz MW]
