Champagne Joseph Perrier was founded in 1825 in Châlons-en-Champagne and today is the only remaining family-owned House in that city. The House became supplier to Queen Victoria and her son Edward VII in 1889 and this cuvée is still a favourite among our Royals. Very pale yellow-gold in colour with a well-defined cordon, the wine shows golden apples and a hint of pomegranate with buttered toast undertones. Brut-style (7g/l r.s.), the light and lively palate is framed by racy acidity and crackling mousse texture with good intensity and length. A linear style, this is a good match for elegant turban of sole with scallop mousse and salmon mousse. [Patricia Stefanowicz MW]
