Chef Dave Pynt to sit at the helm of People People Brewing Co

The chef Dave Pynt, who is also the founder of Burnt Ends Hospitality Group, is set to take up a position as the head of the new People People Brewing Co in Singapore.

The venture, which sees Pynt join forces with Loh Lik Peng who is the founder of Unlisted Collection along with brand builder and hospitality entrepreneur Pete Thew and brand and consumer strategist Jason Moy, will officially open at Resorts World Sentosa and will span 9,000 square feet.

Combined talent

According to Pynt, each of the co-founders will draw from each of their individual backgrounds across culinary craft, hospitality development, brand-building, and consumer strategy, with each bringing their shared focus to the new business in a bid to boost its success.

The People People brewing programme will also be led by the award-winning brewer Nick Calder-Scholes who brings with him more than a decade of brewing experience from across the UK, Europe, and Asia-Pacific.

In terms of positioning, People People Brewing Co is being outlined as “a working brewery and social space designed to bring people together” as well as a site that will offer the public “fresh beer and live wood-fired cooking”.

Pynt has revealed that all beers available will be produced in-house on custom-designed equipment and the plan is for his guests to be able to observe the brewing process from grain to glass throughout the day.

Four distinct collections

Additionally, he noted that each pour is set to be served directly from five 1,500-litre tanks into custom-designed taps and that the proposed brewing programme will feature four distinct collections as part of its remit. These are understood to be named its “core” offer, its “seasonal” beers, a “Workshop” series, and the brewery’s own “Founder’s Reserve” beers.

The Burnt Ends approach

The food menu that will be available alongside the brewery’s drinks range, will be” rooted in the Burnt Ends approach and will centre on casual, shareable dishes designed to complement the brewery’s range” with the plans for the set-up revealing that the new kitchen will feature a wood-fired Classico oven and a Camino open-fire hearth.

Speaking to the drinks business about the plans for the new site, Pynt said: “We’ve always built restaurants around fire, good food, good booze and great people. Brewing beer is a natural extension of that. It’s social, it’s delicious, and it brings people together in a way few things can.”

Pynt told db: “With People People Brewing Co, the idea was simple: brew the freshest, best beer we can, pair it with proper wood-fired cooking, and build a place with real energy.”
