Bearface Canadian Whisky has announced the launch of Matsutake 01 in the US, a spirit infused with wild Matsutake mushroom, which it says taps into the trend for umami flavours.

The release of Matsutake 01 marks the US debut of the Bearface Canadian Whisky‘s Wilderness Series.

Master blender Andrés Faustinelli said the expression has been “a long time in the making”. He said: “With each new limited release, we strive to shatter category norms and challenge traditions. I know Bearface Matsutake does just that. As seen with the latest spirits trends – umami flavours are in. The Matsutake mushroom grows once a year in the Canadian wilderness making it highly covetable and rare and brings a sophistication to this bottle unlike any other whisky.”

Canadian regulations state that anything labelled as Canadian whisky, Canadian rye whisky, or rye whisky must be aged in “small wood” (less than 700 litres) for at least 3 years.

Whisky rules in Canada are unique. The country’s law allows for whisky to contain added caramel colouring and flavouring. Up to 9.09% added flavouring is also permitted in Canadian whisky, as long as it is a wine, or a spirit aged at least 2 years in wood.

Legislation in the country called the “Certificates of Age and Origin for Distilled Spirits Produced or Packaged in Canada Order” states that whisky to be exported as a blend can contain up to 9.09% imported spirits and still be labelled as a Canadian Whisky, Canadian Rye Whiskey or Rye Whiskey.

The first collection within the Wilderness Series is an Elementally Aged trilogy blend of French Oak, Sherry Pipes and Casked Matsutake. Elemental ageing, according to the brand, is a process which involves selecting oak casks to be matured in repurposed shipping containers and exposed to the elements in the Canadian wilderness. The fluctuating temperatures within the Bear Country’s extreme northern climate are intended to amplify the interaction between the whisky and wood.

Matsutake 01 has an ABV of 42.5%. It is available at select retailers in CA/CO/FL/IL/IN/NY/TN/TX/WA at SRP $44.99 for 750ml.
