The food and beverage manager for Gravetye Manor talks to Douglas Blyde about his equestrian past, serving The Queen, and how best to deal with an inebriated guest…

What is your vintage?

I was born in Puglia in 1983. From that vintage, I am fortunate to have enjoyed glasses of Château Margaux and Gaja Sori San Lorenzo from a guest who knew that I was born in that year and brought in the bottles as a present.

Who has inspired you?

My grandfather who was a horse trainer for all his life and his passion and assertiveness was admirable.

Tell us something surprising about yourself?

I used to be a horse trainer before moving to the UK.

Where did you work before?

The Ritz, Luton Hoo, Sopwell House and Macdonald Bath Spa.

Who is the most memorable guest you have looked after during your career?

The Queen during my years at the Ritz.

What bottle sparked your oenophilia?

Opus One 1997 during a visit to the winery.

What are standout producers on your list at The Dining Room?

Fanny Sabre, Roagna, L’Azienda Agricola Vallone, Emmerich Knoll, Weingut Kühling Gillot, Alexana and Far Niente.

What has been a standout wine pairing with a dish by head chef, George Blogg?

Far Niente 2015 with cod, mussels, leek, and coastal herbs. The wine is beautifully balanced and present with bright aromatics of tropical fruit, pairing well with the mild and milky flavour from the cod.

What is he like?

He is the best chef I have ever worked with very humble, always approachable and I simply love the fact you can identify his cooking philosophy in each dish.

How many references are there?

550-600.

Is wine still stored in the manor house’s original cellar?

Yes.

Which table is the best?

Table 10 affords a great view of the gardens as well as the dining room itself.

Which style do you find it hard to get along with?

I am not so keen on Loire Chenin Blanc.

How would you handle a spectacularly drunken guest?

Approaching the guest in a friendly manner, establishing communication, assessing how much they had to drink, inviting them to move to a quieter area, advising them they had too much to drink, then offering some water.

Where else do you like to dine?

At my mum’s, no venue in the world can beat your mum’s food.
