Bun House team to open Hong Kong style concept

Restaurateurs Z He and Alex Peffly are set to open Wun’s, a restaurant and bar in London’s Soho inspired by 1960s Hong Kong.

Following the success of Bun House, which specialises in Cantonese steamed buns, the husband and wife team will open a third site on Soho’s Greek Street.

Designed by He, the interiors are set to feature double folding windows which will open onto the streets of Soho with wicker chairs and communal booths reflecting Hong Kong’s open air street cafes or dai pai dong.

A bar on the floor below has been designed to echo the spirit of Hong Kong’s nightlife with a neon-lit bar, velvet seating and a soundtrack of psychedelic and go-go style music.

Featuring nostalgic Cantonese dishes from He’s childhood, the menu will feature her family’s signature dish called ‘My Gran’s secret recipe for sour plum braised duck’ alongside clay pot rice dishes of house soy braised aubergine rice; Iberico char siu rice; and a selection of skewers with bar snacks such as spiced peanuts; fried whitebait; and XO bone marrow with fried mantau.

Desserts will include Hong Kong egg tarts; Osmanthus goji ice cream; and Childhood fried milk.

Utilising more unusual Chinese spirits and ingredients, the drinks list will offer cocktails such as ‘Green Bamboo & Quince’ with bamboo fenjiu, pue’er tea liqueur, fresh quince and mango; ‘Chrysantheum & Haw’ with Tou Mei Chrysanthemum wine, haw liqueur, plum sour and dehydrated haw; and the ‘Plum & “Coke”‘ with Sour plum infused baiju, liquorice, sour plum tea, and five spice syrup.

Celebrating Hong Kong’s craft beer scene, the list will also include a selection from breweries such as from Moonzen and Young Master.

A selection of mocktails will also be available including Lavender and ‘HK Milk Tea’; ‘Sour Plum and Tomato Tea’; and ‘Peach & Star Anise with Kombucha fizz’.

Founder He said: “Wun’s means a lot to me – it’s my name in Cantonese for a start – so we’ve created everything I would want from a Hong Kong bar. Somewhere to relax during the day and settle down for the night to drink, feast and party until the early hours.

“1960s Hong Kong was an interesting time when the city prospered and the nightlife really took off so Wun’s is a nod to that era and my own little slice of Hong Kong here in London – I look forward to sharing it.”

Following their launch in later this month, Wun’s will reveal a calendar of regular events including monthly DJ nights exploring the underground music scene of China’s biggest cities and masterclasses on Chinese spirits.
