Laura Catena developed this lighter style sparkling for Elena de Mendoza, who wanted a lighter aperitif. Very pale lemon-green with persistent bubbles and a defined cordon, the wine shows white cherry, green apple and pear with a hint of acacia honey. Medium-sweet (54g/l r.s.), the palate is light-bodied with lively acidity and brittle mousse texture, good definition and quite a long finish. Definitely aperitif in style, the wine will suit Asian-style \'light-bites\'. [Patricia Stefanowicz MW]
