Based in Béziers in the south of France, Chavin is an innovative producer of wines with a focus on lighter, lower alcohol wines and no-alcohol wines. Under the direction of Mathilde Boulachin, a native of Champagne with extensive experience in Sweden, the company is setting a serious bar in the world of non-alcoholic white and pink wines. This wine is a \'practically perfect\' example. Pale vieux-rose in hue with gentle effervescence, the wine displays strawberry, cherry and pomegranate fruit with a hint of smoky yeast character. Medium-dry (25g/l r.s.), the palate is mid-weight, well-defined with bracing acidity, crunchy mousse texture and linearity across the mid-palate. Long and savoury on the finish, this is a no-alcohol wine that actually tastes like the \'real deal\'. The light-ish style is absolutely stunning to pair with Beijing Chinese cuisine, especially where chicken or prawns form parts of the dishes. [Patricia Stefanowicz MW].
