Schloss Johannisberg has been known for its Spätlese wines since 1775, and they were a favourite of Queen Victoria. This example, really an Auslese in style (76g/l r.s.), is delectable. Pale lemon-green in colour, the wine has apricots, white peach and mixed apples with complex aromas of white flowers, orange zest, orange honey and a tinge of butter. Very sweet (76g/l), but not luscious, the palate is light-bodied, very intense, pure and layered, sparked by racy lemon-lime acidity. Wonderfully long, the wine would partner a rich seafood dish, such as roasted tiger prawns wrapped in sea bass served on a bed of tagliatelle with a gently cayenne-spiced cream sauce.
