Catalina Sounds is well-known for its stylish wines. The wine is fermented in stainless steel and then given a kiss of neutral oak during maturation, adding a delicate toast note and creamy texture. Very pale lime green in hue, the wine has green apple fruit with nettle and gooseberry, balanced by wood nuance and framed by fresh acidity. A layered, complex wine that will be delicious accompanying squid simmered in tomatoes and white wine, with tiny black olives, herbes de Provence and saffron. (Patricia Stefanowicz MW)
