Tasting notes:

Established in 1860 by Edmond de Ayala in Aÿ-Champagne Grand Cru, Champagne Ayala stays true to its roots. And its motto, ‘Honour the Essence’, points towards the purity of its wines. This wine is Ultra-Brut with zero dosage, yet shows plenty of intensity and interest. Medium yellow-gold in colour with persistent small bubbles, the aromas exude red berries and yellow apples with buttered toast autolysis and an orange zest note. Mid-weight, the palate is well-defined, the flavours supported by brisk acidity and velvet mousse texture. Layered and complex with a lingering finish, this fine wine will pair beautifully sea scallops, green beans and mange-tout with chili and lime and a sprinkling of dillweed, a dish as intricate as the wine.
