Bodegas Salentein has sourced this wine from the high-altitude Pyros Vineyard in the Pedernal Valley of San Juan, where the rocky, poor-quality soils are comprised of flat, dark-coloured flint stones that give the valley its name, ‘pedernal’ being the Spanish word for ‘flint’. Highly-rated and justifiably so, the wine is quite deep ruby-hued and exhibits mixed berry fruits and smoky oak. Quite rich, the palate is reserved, elegant with crisp acidity and linen-textured tannins balancing the flavours. Well-defined with a savoury finish, the wine is a fabulous match for filet mignon.
