Tasting notes:
El Tomillo (‘thyme’) vineyard is at a slightly lower altitude, around 1,075m, in the Paraje Altamira appellation, in scrubland scented with the herb after which it is named. Sandy soils with calcareous stones dominate, and the wine reflects this with a chalky-earthy nuance. Deep ruby-purple in hue, the wine is full bodied, sweet-fruited with blackberry and blueberry flavours, supported by dense, silky tannins and crisp acidity. Roasted coffee bean, minerality and a floral, gently herbal lift add complexity. This wine would work beautifully with classic Italian saltimbocca, maybe substituting fresh thyme for the more usual basil. (Patricia Stefanowicz MW)
