The Salentein winery is located in the Uco Valley, where its three vineyards are at altitudes of 1,050m to 1,700m. The Los Jabalíes (Wild Boars) vineyard is at 1,400m in the San Pablo appellation, so benefits from cool nights and warmer days and, like Salentein’s other vineyards, is irrigated by snow-melt from the Andes. Before fencing was installed, the local wild boar would feast on the ripening grapes every night, then retreat into the adjacent groves of trees to avoid early morning hunters. It is true that wild boar sausage makes a fabulous partner for this delicious Malbec. The wine, deep ruby in colour, is packed with a core of vibrant black cherry and blueberry fruit, framed by fresh acidity and slightly grainy tannins. Gently smoky oak and a touch of celery leaf add interest. Delectable wine. (Patricia Stefanowicz MW)
