Showing that Mexico can yield fine results with Cabernet Sauvignon is this organic red from the nation’s hilly and historic viticultural region called Valle de Parras. The wine is just starting to show some evolution, with soft, fleshy, slightly stewed dark cherry and blackberry fruit, with a hint of dried mint and cedar, then fine, grippy tannins on the finish.
