Sharpham Wine has moved downriver to a South Hams estate vineyard that has been producing Sharpham wines since 1981. The grapes, including the Chardonnay and Pinot Noir for this stunning wine, are grown on south-facing slopes, which give plenty of sunshine to perfectly ripen the grapes. This beautiful sparkler shows a pale gold hue, with perhaps a tiny hint of peach, and tiny, persistent bubbles, with ripe peach and red berry fruit, and toasty autolysis overlay. Very brut in style, the palate is mid-weight with the flavours framed by bracing acidity and velvet mousse texture. Elegant and lingering, the wine will be an excellent pairing for tiger prawns sautéed with garlic, parsley, fresh basil and lemon juice in white wine. (Patricia Stefanowicz MW)
