Since 1995, Ed Carr has produced wines worthy of joining the hand-crafted rich tapestries of the French city which gives this Tasmania winery its name. This wine, pale lemon-green in hue with persistent streams of tiny bubbles, exhibits green apple, white cherry and lemon-lime, with an underlying freshly baked baguette nuance. Ultra-brut, the palate is elegant, with lively acidity and satintextured mousse supporting the intense, pristine flavours. Lingering and bright, the wine will be a good pairing for simply grilled lobster tails, a little butter on the side. (Patricia Stefanowicz MW)
