Church Block, the first wine produced by Greg Trott under the Wirra Wirra label in 1972, is named after one of the original vineyards, next to the 1854 Bethany Church and across the road from Wirra Wirra’s ironstone cellars. Deep ruby-coloured, this classic Australian blend of Cabernet Sauvignon and Shiraz with a dollop of Merlot shows cassis, blackberry and ripe plum fruit, with a creamy vanilla oak overlay. Mid-weight, the palate has warm alcohol and complex flavours framed by crisp acidity and dense, velvet-textured tannins. Showing nice length with a citrus nuance, the wine will match roasted guinea fowl on a bed of herbed couscous. (Patricia Stefanowicz MW)
