Tasting notes:

Founded by Carlo Biasiotto and Adriana Moretti in 1986, the Foss Marai company is now managed by their children, Andrea, Cristiana and Umberto. This wine is a collaboration with the Delevingne sisters, who actively participate in its production. A vegan wine, from the varied soils of Valdobbiadene, it has a pale lime-green hue with persistent bubbles and a grapey, peachy nose, with accents of acacia and lemon blossom. Extra-dry in style, the mid-weight palate flavours are supported by crisp acidity and brittle mousse texture. Nicely integrated and with good length, the wine will pair nicely with vegetable tempura, with light soy, ginger and wasabi. (Patricia Stefanowicz MW)
