The pinnacle of Wakefield Taylors wines is named in honour of Bill Taylor Snr, the founder of Taylors Wines, whose vision, inspired by the great Cabernet Sauvignons of Bordeaux, was to create a unique expression of Clare Valley Cabernet. And, indeed, this wine is unique. Deep ruby-coloured, it shows elegant cassis and ripe wild strawberry fruit, accented by gentle cream and toast from oak. The mid-weight palate has lively acidity and linen tannins, with beautifully defined flavours and notes of thyme, balsamic and Alpine flowers. A refined wine that will pair nicely with veal loin chops and artichoke hearts in a cream, shallot and mushroom sauce. (Patricia Stefanowicz MW)
