The Domaine de l’Aigle is located at the foot of the Roquetaillade cliff, near Limoux, in the Haute Vallée de l’Aude, at high altitude, giving a climate similar to Bourgogne, the homeland of Pinot Noir. This youthful version is deep ruby-garnet in colour and has black cherries and redcurrant fruit, with overtones of tobacco and red roses. Dry, very spicy, with plenty of fruit behind, the mediumbodied palate is well-defined and exhibits good freshness and grippy tannins to support the flavours. Warming on the finish, the wine will work well with a spicy ground venison-apricots-dates mix wrapped in puff pastry. (Patricia Stefanowicz MW)
