Michel Rolland, who has acted as consultant to La Conseillante since 2013, has said: “The terroir is the history.” La Conseillante is located at the juncture of Pomerol and St-Emilion. On the Pomerol plateau, the soils are clay mixed with gravel and sand; in the areas close to St-Emilion, the soils have more gravel and are suited to Cabernet Franc. This wine, deep ruby-purple in hue, shows vibrant dark berry and Victoria plum fruit, with smoky oak and hints of clay-like minerality, chocolate and mint. Dry, the palate flavours are balanced by fresh acidity and dense, satin-textured tannins. Long and lush, this is a good match for braised rabbit with flageolet beans. (Patricia Stefanowicz MW)
