Champagne Palmer expresses the essence of its premiers and grands crus vineyards in the Montagne de Reims with this wine, giving elegance and balance. Pale gold in hue, with tight bubbles, the wine has yellow peach and ripe pear fruit, with an acacia honey overlay and toasty autolysis. Extra-brut style, the light bodied palate is supported by zesty acidity and brittle mousse texture. Good definition and a lengthy, slightly grippy finish suggest a pairing for red mullet in a lemon-lime-white wine sauce with a hint of herbes de Provence. (Patricia Stefanowicz MW)
