Cellar master Cédric Thiébault sources the grapes for this ‘haute couture signature’ wine, part of the house’s Élégance Line, from six grand cru villages on the Côte des Blancs: Avize, Chouilly, Cramant, Le Mesnil-sur-Oger, Oger and Oiry. Very youthful in appearance, pale green in hue with persistent, tiny bubbles, the wine shows pippin apples and white peaches with butter and toast accents. Brut-style, the light-bodied palate is slightly lemony, having brisk acidity and brittle mousse texture, and finishes with good length. An interesting, elegant wine that is probably best paired with garden party foods. (Patricia Stefanowicz MW)
